Acid Blend
This is a blend of the three primary acids found in fruit: Citric acid, Malic acid and Tartaric acid. Many recipes call for this blend. One teaspoon of Acid Blend will raise the titratable acid in a gallon of wine by approximately .15 per cent tartaric.
