Cinnamon Sticks - 1 oz.
It's perfect in holiday beers and goes well with ginger, anise, orange and honey flavors. Add 1 whole stick to beers five minutes from the end of the boil. If stronger flavor is desired, use additional sticks or crush for intense flavor

Juniper Berries - 1 oz.
Usually known as the principal flavoring in gin, it is also used to flavor beer and other beverages. Native Americans have utilized juniper for its healing powers and to relieve arthritis. In folk lore, juniper planted outside a front door kept out witches who had to correctly count its needles before entering the house.

Licorice Root - 2 oz.
Do not confuse the flavor of licorice with that of anise oil, which is not related to licorice at all and is a poor imitation. Licorice has been used for everything from cough remedies to ulcer cures. The root imparts a very characteristic flavor and is surprisingly sweet. It contains glycyrrhizin, a substance 50 times sweeter than sugar, and is often added to chocolate to enhance sweetness.

Mugwort - 1 oz.
Mugwort was used the Middle Ages to ward off evil possession and was a popular stuffing for roast goose. As the name implies, it was traditionally used in mugs of beer before the popularity of hops. Europeans frequently stuffed pillows with Mugwort (and hops) to bring good and vivid dreams."

Dried Wormwood - 1 oz.
The principal ingredient in the legendary liqueur Absinthe, wormwood use dates back to before 1600 BC. While used historically as a beverage ingredient, the FDA advises against the internal use of wormwood due to the substance thujone. Though wormwood is still used in the production of vermouth and Campari, it is a variety other than Artemisia absinthium.

Aurantium amarae pericarpium
Also called "Curacao orange peel". These green-gray peels are used commercially to produce Belgian styles. It is a key ingredient in Belgian style white beers.

Sweet flavor, excellent for Belgian strong ales and special holiday brews. A cousin to the Florida orange, this sweet variety will not give your beer a metallic taste like the domestic version.

 While many people confuse wintergreen with mint, they are not related in any way. Wintergreen has long been used as an herbal remedy for arthritis, swollen joints and sore muscles

Vanilla Beans
Vanilla Planifolia are 6 1/2" to 7" long. A 7 to 9 inch vanilla bean will weight approximately 5 grams and will yield about 1 gram or 1/2 teaspoon of vanillin seeds.
Remember that the vanillin seeds are the essence and flavor of the vanilla, so it is important that the skin be as thin as possible. You want a "plump" bean with a thin skin; you want lots of seeds with little moisture . By gently squeezing the bean between your fingers, you can tell how thick or thin the bean is. When the seeds are scraped out, they should come off the skin easily, and no mush residue should be present. If you see so called "sugar crystals" coming out of the bean use them, do not discard the bean. They are pure vanillin crystals.
